We are several days into May, but it's never too late for a currently post, right? Here's what's been up lately and then a few favorites I'm loving right now. ​
celebrating longer days and great weather. South Alabama doesn't always give us springlike weather, but lately we've been having lots of sunshine and breezy weather. Such a welcome change from rain. Also celebrating Mother's Day this weekend! Read below to see what we are doing. 

creating a rhythm again...hopefully. I feel like I've gotten out of the...well rhythm. I'm a lover of routines and lately I feel like I haven't had one. That throws me off, so I'm looking to create a new rhythm and hopefully throw in some things that I love, but haven't been doing a lot of lately. Also, meal plans. It helps me with my budget (that is struggling, but climbing) and keeps me eating healthy. My goal was to do three Whole30s this year and I'm thinking it's about time for another one. 

wearing shorts and tees. Although, my closet is pretty small (literally, because midtown living) and a lot of my clothes come from clean outs of friend's closets. I recently signed up with ThredUp. I haven't ordered anything yet, but I've enjoyed browsing. Hopefully I'll place an order next week and get some more comfortable summer outfits! 

sharing ...less on social media. Because I haven't been on it. I'll admit that I've taken a few sneaks here and there, but it's been ten days and I'm determined to go more. Also, sharing two recipes down below! One for easy pancakes and another for buttery biscuits. 

going on an interactive, behind the scenes, walking food tour! I learned about this tour that happens in my downtown area on the weekends. This weekend, they are offering a special tour for Mother's Day, with extra surprises for moms along the way, and Dad and I are taking mom! I've been wanting to do more experience gifts and this seems like the perfect way to start that! 

some Breakfast Bites I shared these pancakes on my iG story awhile back and lots of people asked me for the recipe. I chose this recipe one day because i had everything on hand, except one ingredient (more on that below). I didn't realize at the time that they were vegan! They are so delicious and my favorite pancake recipe right now. the biscuit recipe is my aunt's! And also another go to because i usually have everything on hand. 

Easy + Fluffy Vegan Pancakes
  • 1 cup flour
  • 1 tbsp sugar
  • 2 tbsp of baking powder
  • 1/8 tsp salt
  • 1 cup soymilk
  • 2 tbsp vegetable oil
Set pan or griddle to medium heat. Combine the first four ingredients in a bowl. The baking powder seems like a lot, but you really can't taste it in the finished product. Add milk and vegetable oil (or if you're like me and don't have any, use applesauce as an oil substitute!). The batter is going to be suppperrr airy and fluffy. I was surprised at first and thought I added too much of something, but after making them again (and again), that's just how the batter is. You'll get about 6 pancakes with this amount. Cut in half for an easy, single serving for one (which is what I do, because #singleliving. Top with syrup, or like I do, peanut butter and honey. And maybe a few chocolate chips thrown on top.

Buttery Biscuits
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp cream of tartar 
  • 1/4 tsp salt
  • 1/2 cup butter
  • 3/4 cup milk
Pre-heat oven to 450. Anyone else get anxious about getting their oven that hot? It's not my favorite, but you want a hot oven for these biscuits. Mix first 5 ingredients (and if you're like me and don't have cream of tartar use white vinegar as a substitute. For every 1/2 tsp needed of cream of tartar, use 1 tsp of vinegar). Use a fork or pastry blender and cut in the butter until you have what looks like coarse crumbs. Dig out a well in the middle, add all of your milk. Stir until just moistened. Throw some flour on the counter and knead the dough until almost smooth. Roll out to about 1/2 inch thickness, cut dough with biscuit cutter (or a glass cup, let's be real). Place biscuits on ungreased baking sheet and bake for about 10-12 minutes or until golden. Delicious with preserves or honey and butter combo. Eat for breakfast (or lunch like I did) and of course, with a big mug of coffee.
